Valentine’s Day is in a few days! Instead of trying to grab last minute reservations at a crowded restaurant, why not make a heart-y and healthy Valentine’s Day meal using bone-in pork loin roast? Publix has bone-in pork loin roasts on special this week. Their sale started Thursday, February 9 and ends on Wednesday, February 15.

I’ll be honest, I have never purchased a bone-in pork loin roast before now, but after reviewing the recipe ideas at Pork Be Inspired, I was excited to try a new dish! Check out these meals you can create for your sweetheart and family without jeopardizing your health!

Since putting a roast in the oven or a crock pot seemed like the typical route to take, I decided to try something different. So, the kabobs won my vote. I also thought my toddler would enjoy his meat and vegetables cooked on a skewer (as long as he didn’t use the skewer as a weapon of course)! Plus, it would give him more outside time since I would have to tend to the grill.

Here is the recipe that inspired me!

Grilled Indian Pork Kabobs With Sweet Onions and Red Peppers

Cook Time: 10 minutes
Marinating Time: 2 hours


1 bone-in sirloin pork roast, about 4 pounds, boned and cut into 1 1/2-inch cubes
2 large red bell peppers, seeded, deribbed, and cut into 1-inch squares
2 large sweet onions, such as Walla Walla or Vidalia, cut into 1-inch chunks
12 12-inch skewers, soaked in water for at least 30 minutes
Vegetable oil cooking spray

Indian Spice Paste: 

4 large cloves garlic
2 tablespoons curry powder
1 tablespoon kosher salt
1 tablespoon ground cumin
1 tablespoon ground coriander
1/4 teaspoon cayenne
1/2 cup fresh lemon juice
2 tablespoons olive oil
2 tablespoons water

Cooking directions:

To make Indian spice paste, place garlic in food processor and process until minced. Add spices, lemon juice, oil, and water. Process until thoroughly combined.

Place pork in large self-sealing plastic bag. Pour paste over pork and mix pork with paste until pork is evenly coated. Seal bag and refrigerate for 2 to 4 hours.

Prepare medium-hot fire in charcoal grill or preheat gas grill to medium high. Thread pork onto skewers, alternating with pieces of red pepper and onion. Spray grill grate with vegetable oil spray. Grill kabobs directly over medium-hot fire, turning to brown evenly on all sides, for total of 10 to 12 minutes. Transfer to warm platter or individual dinner plates and serve.

Serves 8-10.

Serving Suggestions:

These delicious, colorful kabobs are terrific served with rice pilaf or flavorful couscous and a medley of grilled vegetables. The Indian spice rub can be made several days in advance. Place in a covered jar and refrigerate until ready to use

Since I wanted my son to eat his pork, I opted not to make the spicy marinade. He is a dipper (mustard is his preference), so I decided seasoning the pork with pepper and sea salt would be adequate. I also used red peppers, white onions, as well as red and yellow cherry tomatos picked from my garden.

I selected a 3.5 lb pork loin sirloin roast. I was nervous about cutting the pork, but it was a breeze! I was able to cut the pork into smaller chunks that wouldn’t take too long to grill. Also, I was able to trim the meat so minimal fat was remaining.


Here are my skewers before they were placed on the grill. Instead of mixing the meat and vegetables on a single bamboo skewer, I opted to keep them separate since cooking times would vary. If you want to be festive, you can cut your veggies into heart shapes!

I let my skewers grill over medium flame on a foil lined grill (coated with olive oil to prevent sticking) for approximately 15 minutes. I made sure to flip them over a few times so they cooked evenly.

The final product looked like this!

While the skewers were cooking, I also prepared noodles for my boys and spaghetti squash for myself (I am watching carbohydrates). I also made some delicious cheese stuffed jalepeno peppers.

It was not necessary to take an after photo since our plates were practically licked clean! Even my son enjoyed the food.

Honestly, this pork dish was so easy and delicious! It was tender, moist and full of flavor! Without a doubt, I would make these pork skewers again!
