#Medifast Granola Recipe And Week 4 Update

Last week for my week 3 Medifast update, I “thought” I hit a plateau. GOOD NEWS…that was NOT the case. My Medifast nutritionalist (Charlotte) explained what was happening.

“Often times, when people introduce new and/or more vigorous exercise, weight loss will be at a standstill or you may even gain a bit of weight for 1-2 weeks.”

In a nutshell, introducing new exercise into my daily routine has caused my muscles to become inflamed and swollen with fluid retention, as they adjust to the new change (or I’d like to call it “new way of life”). This is my body’s way of protecting muscle tissue.

As Charlotte recommended, I stayed on plan and continued with my activity level (8 miles of jogging, lots of walking, fat burning exercises, hours of yard work and gardening, etc.). Great news to report for week 4, the loss continues!

Week 1: Down 6.6 lbs

Week 2: Down 3.6 lbs

Week 3: Up .2 lbs

Week 4:  Down 3.6 lbs

TOTAL LOSS: 13.6 lbs 

Charlotte also gave great advice about eventually switching to the 4&2 plan (4 Medifast pre-made meals and 2 lean and green meals daily) due to my increased activity level. This will help when I start to feel hungry and/or weak…which has not started happening as of yet. The 4&2 would provide additional protein and calories, but still keep me in fat burning/weight loss mode. After discussing the 4&2, my goal is to switch once I lose 20 pounds. I am VERY excited for this upcoming change.

Lastly, I wanted to share a Medifast granola recipe I tried this week. Personally, I wish I had NOT added the Splenda packet, it turned out way too sweet for me. But, it’s a nice alternative for a crunchy meal to take on the go!

Medifast Granola Recipe

Medifast Granola

Step 1: Gather your ingredients

  • 1 Medifast oatmeal packet (any flavor, I used Medifast Apple Cinnamon Oatmeal)
  • 1 Splenda packet
  • 1 pinch of baking powder
  • Spice of your choice (I used cinnamon)
  • 3 TBSP water

Step 2: Dump dry ingredients in a small bowl.

Step 3: Add 3 tbsp water and mix. Mixture will be thick and dry (you want it to stick together and be crumbly).

Step 4: I stirred up the mixture and didn’t have to crumble, just placed it on a parchment paper lined cookie sheet.

Step 5: Bake at 400 degrees for 8 minutes, then flip the granola. Bake for 3 additional minutes until brown and crispy (do not burn).

Step 6: Let it cool and enjoy!
